What happened to the engine to require a sleeve set? Coolant in the crankcase? If so that crank will likely require grinding back to true.

Use the highest compression piston/sleeve set.
Don't sink the valves and seat by grinding. It just drops compression and ruins everything you tried to gain. New valves and seats or mill the head to raise the old valves back up.
