I was going to say the same thing. I love thinning out the beets. Beet greens are my favorite thing out of the garden (although they are one of the first things out too so I'm probably biased).
Just make sure to take extra care when pulling them and weeding them before-hand to keep the dirt off. As good as they are, grit in them can ruin them completely.
