Plant it after it warms up a bit around the middle of April and yes water it every day. Plant the stems deep or lay them parrallel with the top of the soil, cause every part that is underground will produce potatoes. If planted shallow less potatoes will be produced.

If she like sweet potatoes they are started this way.

I'm glad to hear that your seven year old daughter likes doing this. She will keep this interest for the rest of her life, I know I did. It will pay off some day too!!
