All kidding aside, I've heard that if you cut off the tail and roast it over an open fire until the outer skin bubbles and comes off, what's left will taste just like salt pork. I've trapped alot of beavers(swim in the water rodent kind) but never actually tried it.
On a similar note, muskrats used to be pretty common table fare in these parts. Back in the market hunting days of the early 1900's, one enterprising trapper here in the Nebraska Sandhills dressed and shipped dozens of muskrats to a fancy Chicago hotel which served them in their upscale dining room as "Marsh Rabbits". Seems the authorities got wind of this and tried to take action but they couldn't find any laws against selling muskrats for human consumption. However, the resulting publicity kinda closed the market for 'em.
