A friend of mine that used to produce maple syrup in this area did it this way. For a tap, he just used small PVC pipe, and drove it into the tree. Then he would take a clean plastic milk jug, with the cap still on it, poked a hole in the side, about half way up the side of the jug, and just big enough for the pipe to slide in, but tight enough that it wouldn't fall off easily. The sap runs into the jug. To collect the sap, he would just take the lid off, and turn the jug upside down into a 5-gallon bucket, turn it back up, put the lid back on, job done.
Jugs were cheap, PVC was reusable each season, and he had about 150 trees tapped with this system.
