I just made a gallon pot today also. Try this recipe. 1 pqckage 16 oz Navy beans, soak overnught. 1/2 package 8oz baby lima beans, soak overnight. 2 smoked ham hocks 1 cup celery 1 cup diced white onion 1/2 lb deli ham cut in one thick slice. Diced it makes about a cup.
In the morning simmer hocks 30 minutes,in 3/4 gallon of good water. Add the Navy beans, simmer another 20 minutes. Add the limas, and deli ham, another 20 minutes. Add the celery and onions and simmer the last 20 minutes. Remove hocks and trim the ham off and add back to pot. Season to taste. White pepper and salt for sure.
