I used to work for a guy who had Guernseys. He milked about 40 and did quite well. He claimed they ate enough less than Holsteins that they more than offset the smaller volume of milk. He sold to a Mozzerella cheese factory and got a hefty premium over Holstein milk. He explained that it isn't the volume of milk your cows make, it's the difference between what the milk brings in in dollars and what it costs to make it. This was before the organic craze.
