Having a thermostat installed is ESPECIALLY important in certain applications in which the thermostat has a second "plate" or "disc" at it's "bottom" end that moves along with the main part of the thermostat.
In these setups, the disc begins to restrict the bypass cooling passage as soon as it begins to move to open the main cooling passage.
With NO thermostat installed, the coolant always flows in BOTH the bypass cooling circuit AND the main circuit to the radiator, making for less efficient cooling and a hotter-running engine when under load.
