I have gas welded hundreds and hundreds of joints of well casing with no problems - just takes time. But, on this project, I wouldn't unless that was the only way I could.
I have used thousands of pounds of 6011's. They are a true root rod. A 7018 is an overlay rod - good for build-up, or filling in a large area. I would NEVER use a 7018 or 7014 for the root pass - they ALWAYS leave a line of slag at the bottom of the weld. A 7018 MUST flow completely flat against what you are welding to push the slag out - any voids of any kind will create a slag intrusion. A pass or 2 with the 6011 will fill the initial void, then you can fill in the rest with your 7018.
To the original poster, I would go with DC anytime I could. With it, you would want a 6010 for the root pass, but a 6011 will also burn fine on DC - you just get less weld per rod. I have to agree on the 7018AC. I've found them to be hard to start, they make a porous weld, and they don't flow like they should. They are also bad for going out on you while in the middle of a weld. That can make you say bad words.

But it's important not to let that packaging lull you into a false sense of security. The appearance of matching sleeves, pistons, rings, and bearings can cause frustration and agony if not properly measured and installed in a workshop environment. Following c
