I would be very surprised if you would have any trouble from police unless your pickup is extremely loud. It would be very doubtful that police officers would ever look under your pickup unless they have reason to believe that you are trying to smuggle something like drugs.
On the other hand, you probably would not want to sell the pickup to someone living in California, since they undoubtedly would have to have it inspected for emissions. Without the catalytic converter it is doubtful that it would pass the sniffer test and would not pass the visual exam. The buyer would be forced to buy a replacement converter, which could be an expensive repair, in order to get it to pass the emissions test.
I wouldn't worry a bit. Just take care of my business in California, drive normally and legally and get back home where things are a little less restrictive. Good luck!
