Engine Oil

I need a little help regarding engine oils. Can someone offer guidance on a source for interpreting oil call outs? For example, what is the difference between a 10 and 10W or a 30 and 30W? Also, I believe I have seen a 20-20W oil. What does that call out mean? Also, IH recommends non-detergent oils with a low ash content for older Farmalls. Why is the ash content an issue with todays oils? Whats wrong with using a detergent oil on an older tractor? My very limited understanding of a detergent oil is that it does not clean a dirty engine, but holds contaminates in suspension. This minimizes deposits within the engine. Regarding the ash content, what exactly is this referring to? Is ash a byproduct of refinement processes? Short of ordering a specificaion from SAE, what are some good educational sources for understanding how oils are formulated, identified and work? Sorry for the Oil 101 questions. Thanks in advance.
