A single has the pressure of the contents of the bottle against one side of a diaphragm and pressure from the regulator handle on the other. It"s a differential pressure thing.
Problem with that is that as your bottle looses pressure the ratio changes so your output changes causing you to have to readjust your outpressure.
A dual stage has 2 regulators and the regulated output of the first is what feeds the second. Since there is some regulation of the input to the second one, the opportunity for the second to vary in pressure output is severely limited.
Not really worth the money for small time operations like my farm shop.
