Insurance! I had a really nice roll-back trailer custom built with winch and everything. It wasn't cheap. I added it to the general policy I have on all my other equipment like tractors, JDGator, welders etc. It was less than $20 a year. Since I am well prepared for it I don't imagine anyone will bother stealing it.
Next best thing... I built 2 trailers in the past that I made the main part of the tongue out of large square tubing. I slid smaller square tubing with the hitch attached inside the larger square tubing and drilled the whole package for tractor pins. When you park the trailer, just take the tongue and hitch with you when you go. If they want to steal one with that setup then they'd really have to be prepared in advance.
