Sounds like it could be a money maker. Good on you for thinking "outside the box." Most folks wouldn't realize the amount of $$ that can be had recycling the stuff off of a house. Some worry-wort concerns: What kind of voulenteers do you have? Are they kids, or adults? I wouldn't want anyone under 18, because of liability concers while they're in your care. Also, if someone falls off a ladder or get hurt, whose liable? Make sure everyone has their health insurance up to date. I'm kind of surpirsed that whoever owns the house would be willing to let people start tearing stuff off of it, simply becasue of the liabilty concerns. If it were my house, I'd be afraid someone would fall through a hole in the roof and turn around and sue me. This day and age, who knows. I'm sure professional demolition companies have to have all sorts of insurance. If you're gonna be tearing out copper pipe, make sure people understand what asbestos is, and how to stay away from it.
