OT- greenich,black summer sausage?

Hey all, I had about 100+ lbs of venison trimmings that I had made into multiple types of sausages. Well as has been good, but today I opened the 1st package of "Jalepeno/chedder summer sausage" and the cutend was this greenish black color. I cut the log in half and the center was nice and red, but the outer 1/8"-1/4" just inside the casing was the same blackish green color. Smelled kinda funky too, but was hard to tell with the pepper smell there too. Any idea what would cause this, I am thinking maybe it sat too long before it was smoked/cooked, cause it looks rotten to me. Any ideas ? Locker is gonna make me some new stuff, but I would like to know what could cause this, I received it froze and kept it froze.
