On my 40 x 50 shop that I am working on, I used the perforated foil faced on both sides on the walls & ceiling. Huge difference in heat transfer from the hot metal coming into the building. Before I put up the foil, I could feel all the heat radiating into the shop. Now I feel hardly any heat at all. The link below shows the walls done.
I would say to keep the foil side against the metal and also have an air space.
