That type of water-pump switch is available - we used to always install them on wells that dry out or pump out easily. It's just the standard type pressure switch with an additoinal "low water shutoff" and shuts down once PSI gets below 5 pounds. Once that happens, you have to manually reset it with a little hand lever.
Also keep in mind that the older piston pumps often need new leather seals on the pistons - especially if they've been run dry. Easy to fix - and in fact - the piston seal is easy to make. They also - usually - will will not run as high PSI as a jet-pump. Sometimes it's best to have the shut off at 30 PSI - but it all depends on the condition of the pump.
