I can most of our tomatoes. I make salsa and sauce, some with onions, peppers and garlic. I pick into 20# lug boxes, stack until the green ones ripen to red. I rinse off the dirt in a plastic mortar mixing tub, cut out the bad parts and pile them in a 10 gallon pot. I use a ladle to take out the clear juice as they cook. I run the cooked tomatoes through a Squeezo (brand name, others work too) which separates the skin and seeds from the pulp. I heat the sauce again, pour in quarts and process in a steam canner for ~10 min. When I do salsa, I add some vinigar to maintain acidity (sometimes add a bit of sugar to keep it from being too sour). I do ~160-200+ lbs. a year. My wife likes whole tomatoes - they are nice but don't make much sauce when cooking. Ray
