I'm involved with a company that makes the front bit of the harvester. A tank of bleach solution is carried on the machine and, as each lettuce is placed in the cup, bleach is injected into the cut stem to increase shelf life.

The ones from the machines we make go straight into packs in the trailer and straight from field to the supermarket. The machines are cutting and packing 40,000 lettuce per day.
