You don't mention what You have for equipment but I'd hook the rack or racks to the back of the baler and bale all Your racks full in the afternoon when it bales good and let them set till morning and You and Your Wife can unload them when it's cool.... or hire neighbor kids or Your Customer's Kids to help bale! Dad and the neighbor & I when I was 10-12 yrs old could bale 1000 bales of hay or straw in an afternoon and I'd still have time to play little league baseball after chores & supper....Dad's farm had HUGE barns and NOTHING ever got stacked in the hay mow....Where it landed off the end of the bale conveyor was fine.
