A slightly older F150 would fit the bill. Lots of those are around w/ 4.9(straight 6 300) 5 sp. manual Mazda transmissions, and regular cab long box. Mine is one such creature, 2wd, and I'm getting about 16-18 MPG at the moment. I wish I had 4wd, and my next truck will, but for a 2wd it does more work than most other 4x4 3/4 ton trucks around. I pull 7-8 ton loads of hay in the winter when we buy from an auction. I'm not saying it's completely legal and/or a good idea, but the only time I have problems is getting going on ice (and wet clover) and stopping when I have an idiot in front of me, but that doesn't normally happen as I can only go about 20-25 mph w/ a load.
