Aloha, I use regular vegetable oil and bake it in the oven. Use it only for frying and after you are finished cooking, drain off the excess oil and wipe up the rest. Rinse the pan with a brush under running cold water. Never use any detergent!! Oil the pan after use and it will be better than teflon. Oh, don't ever leave the pan heating without any oil because it will burn off all the oil out of the pores in the cast iron and you will have to start all over again. Mahalo, doogdoog
