Blanching stops the enzyme action. I go with a three minute blanch, as said only do enough to where you can keep the water boiling as corn is added. Lots of cold water as stated. Then DRAIN THOROUGHLY before bagging it. Freeze the bags in a single layer, spaced well apart if possible.
