Round-up (glyphosate) is a non-selective, short residual herbicide. It will kill just about anything plant wise (unless you are in an area that has resistant weeds, see this page: http://www.weedscience.org/Summary/UspeciesMOA.asp?lstMOAID=12&FmHRACGroup=Go). Garden wise, if you apply it to the area ahead of time by a couple days before planting, or if your very careful spraying only weeds, you should be okay. As for human consumption you"d have to drink quite a bit of it, or mix another herbicide or possibly a strong surfactant to make it pretty lethal.
