Depends on who you are talking to......but:
A parts manual will list all parts, but not tell you how to check whether they are serviceable or how to replace them.
A service manual would probably list when (how often) parts should be replaced or adjustments made, but not give intricate instructions in most cases.
A shop manual should list tolerances allowable on all parts, and give detailed instructions on adjustment/fitting/changing where this is not a standard engineering procedure. While it may show detailed explode drawings, it is not a parts book.
That all said, there may be some overlap of what may be described as a service- or shop manual. You need to ask in many instances which they think they mean.
