The current (Amperage) capacity will double and the voltage will remain the same when you connect 2 identical batteries in parallel i.e. positive-to-positive and negative-to-negative. The voltage will double when you connect two batteries in series i.e. negative to positive.
I would recommend using one 12 Volt battery if you have enough physical space for one that meets your cold cranking current requirements.
A single battery tends to have a much longer life cycle than a parallel circuit.
