A good reference Is the National Resaearch Council's book on feed requirements for cattle. Your county agent should be able to help you. I doubt there there is any advantage of one breed over the other in terms of feed conversion or any other economic trait. Good cattle come in all colors. Remember, there is more variation within a breed than between breeds. Don't let all these breed organizations dazzle you with their marketing hype. How you select "your" cattle for your environment and feed availability, etc is more important than the breed. Where I live, 1500-1600 lb cows are common. Down in Nevada, 1000 lb cows do best on desert range conditions. The former wean 750 lb calves; the latter wean 450 lb calves. Both are profitable in a good market.
