Hey CH, unless the service manual specifically calls for a sealer on the head gasket you shouldn't use anything on it. The usual purpose of a sealer is to help fill in any imperfections in the sealing area to prevent oil, water, etc from escaping. In the case of a head I don't know of any of the sealers that would be able to seal the pressure and heat of compression that a head gasket is subjected to. Most but not all head gaskets are gonna be some kind of metal and gasket material "sandwich" and every one I've ever seen like that has always been put on with no type of sealer. The older two stroke Detroits have individual rings around each cylinder and then have "rubber" rings for the oil and water ports and even these are put in without any type of sealer. There are so many different engine mfgs out there that there very well may be one that calls for a sealer of some sort on the head gasket or in that area at least(Like around water and oil ports), but in all the engines I've built and seen built I've never run into one myself.
