I agree with doing it in sheetrock. The code in this county is if the garage is attached to the house you must use 5/8 board. I Keep the walls smooth, and paint with a semi-gloss. Makes the walls easy to dust down. I'm dealing with dust here in the desert. Dry wall gives you better protection, against burning down the shop, then where you gonna hide out from the wife.
