When dealing with the roll over issue, a wide front is a little less apt to roll over than the narrow front. As mentioned several times in the other re-posts, a wide front can still be rolled over and operator still must drive safely. Wide front just adds a little more stability, slightly increasing your safety zone for a roll over situation. Setting your rear wheel's wider basically does the same thing, just on a different note. Narrow fronts will generally turn much sharper than wide fronts. Narrow fronts are generally your older row crop tractors. Ussually, row crop tractors have some height so that they could drive over the top of crops without tearing them up. You would run the wheel's down the middle of the rows. You mentioned utility. Utility tractors are generally lower to the ground and with wide front. Check out the difference between a 300 row crop and a 300 utility. Same size tractor, but an all together different style. I can't advise you on wich one to get since you only stated mowing. Could go eithwer way. Anybody that advises you on wich one to get, not knowing what you are going to do with it, doesn't know what they are talking about.
