The difference is basically as the name implies.
An open center valve will allow oil from the pump to flow through the center- open center- and through to tank.
Closed center on the other hand is just as the name says. Oil is not able to pass through the cener of the valve. A closed center valve is normally used on a system where the pump is stroked or activated by a signal to the regulator to either stroke a piston pump or shift a valve to allow flow to the control valve.
I don`t know your system, but would hazard a guess that you need an open center valve. Hope any of this helps.
