When I was a kid we always had a Jersey cow mainly for the wider use of the milk. Not to mention the great disposition of the cows. The butter fat was much greater that the Holstien and therefore you could do more with the milk. We used the cream to make butter and other various great tasting things. To this day I still miss the brown sugar syrup my mom made with the cream off of the milk. Might not have given as much milk but what you got was so much better that it made up for the difference in volume. Just my opinion! Ernie Bob
