Hemi is short for "hemispherical," or "half of a sphere." Think of it this way: take a tennis ball and cut it in half horizontally. Look inside the top half of the ball - that would be the combustion chamber in the cylinder head. Here's a pic of what a piston sees in a hemi head(apologies for the size):
