180F plus, 195F is better for fuel efficiency & boiling condensation out of the lube oil.
Heat isn't the problem it's when a steam/vapour pocket forms and allows localized overheating while nearby metal is still liquid cooled. The temperature differential is what stresses metal/gaskets.
With 50/50 coolant and just a 5 pound rad cap 195F is safe.
The old all fuels wouldn't even run until 180F was reached, better 200F.
