Grade 5 steel nuts are rated at 120K psi, grade 8 at 150K, 18-8 SS and 316 SS at 70K. So, by using 2 nuts you're gaining some strength over grade 5, plus the corrosion resistance. Actually, I think 1 SS nut would probably be sufficient, but 2 won't hurt. With 8 nuts on 4 u-bolts (using single nuts), I wonder what the capacity of that assembly would be? Maybe one of our engineer friends with the proper expertise will do the calculations and post an answer here later. I suspect it would be 10 times the rated capacity of the axle, maybe more.
Gotta get to work and stop thinking about this stuff for a while.
