Young people are going to be drawn to careers that they think they will enjoy and have enough demand that it will pay well enough that they can support a family and have a comfortable life style.
Skills that young people enjoy, but that do not pay well become their hobbies rather than their careers. Just like many of our generation enjoy repairing things as a hobby, but we had a different career that paid well enough to support our various hobbies.
It is certainly possible for a few dozen young people to make a good living in a specialized niche market like repairing carburetors, but the carburetor repair market is not large enough to support a million people trying to make a living repairing carburetors.
