The add-on gauge is mechanical, there is no probably to that. The wire you see wound around most mechanical temperature gauges does not turn to make the gauge operate. The expansion of the fluid in the sensor bulb and tube move the Borden tube inside the gauge to move the needle. Others gave you info to review on how the mechanical gauges work near the beginning of this thread.
The light assembly for the add-on gauge is missing in your picture, so there are no wires shown in any of your pictures for a light.
The wire is simply wrapped around the capillary tube to protect the tube. The plastic sleeve on the gauge you have served the same purpose, protection of the capillary tube.
A new sending unit has to match the ohm requirements of that OEM electric gauge or it won't read right, if it does work.
