Ideally, you'd use a new gasket. The world is rarely an ideal place. Sometimes you just have to make do with what you have.
There are a lot of engines out there running on reused head gaskets. I don't think you'll get a lot of people who would admit to it, mostly because of the "holier than thou" attitudes on the subject.
If it looks good, and you can't get one, or you can't afford one, or don't want to spend money on one, AND you plan on taking the engine apart again, or don't mind taking the engine apart again.
I mean it's a bloody FLATHEAD. How hard is it to get the head off? Not very. You don't have to deal with manifolds or valves.
