Hello Joe welcome to YT. For others a NH LX565 is a 40hp skid steer loader, yep I had to look it up. There is no problem with your machine or the cooling system. In cold weather in does not take much to cool a small diesel engine. Not exactly sure but it seems like there may be a small leak or bypass around the thermostat. Just the smallest stream of water around the thermostat will keep the engine from reaching a temperature to open the thermostat. Another thing, is this a cab machine with a heater? That in itself will do quite a bit of the cooling. The thermostat keeps the water from circulating. If it opens a small amount as you see by your temp gun since it is moving real slow the radiator cools the coolant quite readily as it flows from top to bottom. So in my opinion unless it shows it is overheating run it and be happy.
