I am going to say some of those bigger plow bottoms were for either breaking new ground or for dep plowing where they need to pull clay or sand up from below sand or clay to keep it from blowing washing fertilizer or other nutrients down through the soil fast. Like SW TX they use a big disc about 5 foot in diameter to pull the clay up from below to help keep the sand from blowing doing it every so often not every year. There are also some deep plowing plows for similar reasons or for drainage.
