How much does the threaded shaft end protrude from the nut?
If maybe at least 1/4 inch you could make a 1/4 inch steel disc with matching dimples to fit over the six rivet? heads.
Then weld a pipe to that disc and a v belt pulley at the outer end, or a hub so that you can have a choice of pulley sizes if you need to go up or down in diameter.
Or maybe mount a small tire to the generator shaft and friction drive it from the inside or the outside surface of the flat belt pulley?
