Lots of theories but one popular one is due to its use in an old Monty Python sketch, where normal breakfast dishes have Spam added to them in ever-increasing quantities, complete with a chorus of Vikings singing its praises, and drowning out everything else, much as spam does to in-boxes. Version below is one of the more complete ones I could find on short notice but contains subtitles, which you can ignore.
I can remember a hiking trip many years ago--we had one more mountain to climb and so we cooked up most of what we had left for food for breakfast rather than carry it. That included a can of Spam and another of baked beans. I'm sure you can guess the effects, and an added 'bonus' was that all the salt in the Spam made hiking on a long, steep trail without enough water even worse!
