To check the fluid level there may be a dipstick hanging from that breather or there may be a small plug several inches below the valve mount on one of the reservoir sides.
If you know the fluid in it is red, it may well be ATF. It can use straight hydraulic oil or a universal transmission/hydraulic fluid. How much it takes will depend on how low it is. If you get 5 gallons you should have some to add in the future.
