There's a political animal in the woodpile. US congress members are taught from day one to never, ever let a food shortage happen. Which would happen periodically if left to the free market. Why? If a food shortage happens, riots will occur that will make previous riots look like kindergarten picnics and politicians will be skewered. Literally and politically. Therefore, it's better to encourage farmers to grow a lot of food and pay them for any losses thru the backdoor via subsidies.
