Have made maple syrup when I was a kid. Now I just buy it from the neighbor who sells his product at the farmer's market. Pure maple syrup is expensive because it takes a lot of work and time to make. It takes about 40 gal. of sap to make 1 gal of syrup. Imagine how long it would take you to boil off 39 gal of liquid in the sap to get down to 1 gal of syrup. Imagine how much work it is to tap maybe 300 trees and keep going back to them to gather the sap every day. Now imagine how much work it is to gather the wood to burn to boil the sap if you don't have a gas fired evaporator. And that is only a part of what it takes to make REAL maple syrup. Knew an apple orchard owner who would buy pure syrup and cut it with water and sell it as pure.
Just too bad that I am now Diabetic and have to avoid the great stuff.
