Pure maple syrup is made by evaporating the water from sap from maple trees. No other ingredients added. Should be a light amber in colour. If the sap is boils in a open cauldron or kettle, over an open fire, it will be darker and have a distinctive smoky flavour. Once the buds on the trees begin to swell, the flavour of the sap begins to change, and the syrup made with this late run of sap doesn�t taste as nice. The season ends once the buds on the trees swell.
