I was diagnosed with Celiac Disease in 1995, by biopsy. I have been living gluten free, and eating well for 25 years now. You need to educate yourself on what you can eat (lots of great foods) and what you can't eat. A compliant celiac will quickly become educated on recipes and all the foods that hide gluten. I live well, eat too much, dine out a lot and know what is in what foods. There are some fairly good gluten free breads,pasta and pizza products available in the last 10 years. Eat rice and potatoes instead of pasta or bread. If you cheat you will be sick. It is like cigarettes, don't cheat. My wife is a master cook and has a lot of great gluten free recipes that she designed. People often eat gluten free food at our house and don't even know it, and then they rave about the great food. Don't dwell on the things you can't eat, focus on the things you can.
