Bryce, What you are calling H beams, most call I- beams.
Most pole barns space side walls posts on 8 or 9 ft.
One pole barn I had built they used 4x6 solid treated posts, on 8 ft center. New one are 6x6 solid posts 8 ft center and are 48 inches in the ground. Both are 30x40 barns.
I wouldn't consider using metal top plate unless you use metal posts and metal rafters and weld them together. .
I can't think of an easy way to attach an I-beam to wood posts and wood tresses. Both of my pole barns use 2x12s nailed to both sides of post. Nail a 2x6 between 2x12 to nail trusses to.
I have seen steel I-beams used in basement. Mobile home I beams are usually too flimsy.

If you're just looking for a roof and no side walls check into metal carports. Some people have put side walls and ends on carports.
