It s totally doable. I have 3 800 watt panels on my trailer with a 60 amp charge controller and 0 gauge cabling. That is hooked to 6 6volt golf cart batteries, 660 amp hours total. I installed a 2000 watt pure sine wave inverter and and a monitor to keep track of batteries state of charge and solar production.
We dry camp for weeks at a time and run the waffle iron, microwave, multiple TVs, cpap, etc.
The solar system will charge the batteries to full power from 50% discharged by early afternoon on a sunny day. I only run the generator when we need the air conditioners.
