I think they are going to tell you not to shave the head at all.
Seems to be the concensus that if you torque in the correct sequence to the right foot-pounds that it will bring that head flat.
I have seen numerous stories of pistons and valves slapping the head after shaving only a few thousandths.
There are a number of posts in the archives where people have had to resort to 2 metal gaskets or a new head after shaving an N...
